以丰城市三个不同硒含量地区种植的大豆为研究对象,研究了土壤中不同硒含量对大豆中主要成分的影响。结果表明,随着硒含量的不同,C区(高硒区)大豆中蛋白质含量(35.08%)比A区(低硒区)出现显著性提高,而油脂的含量下降,由18.90%(A区)下降到16.52%(C区)。硒含量的不同,对蛋白质的种类没有改变,但对大豆蛋白质分子量分布产生了影响。SDS-PAGE图谱表明,不会改变大豆蛋白质亚基组成,蛋白质谱带数量相同。当土壤中硒含量越高,大豆氨基酸组分中受到影响较大的是半胱氨酸(Cys)和蛋氨酸(Met),在低硒区(A区)和高硒区(C区)半胱氨酸(Cys)含量分别为2.58%和0.124%,蛋氨酸(Met)含量分别为3.02%和2.24%。随着硒含量的不同,对大豆油脂中各脂肪酸的含量在数量上有些变化,但都不存在显著性差异;总硬脂酸的含量会随着硒含量的增大而呈下降的趋势,总n-3多不饱和脂肪酸(Tn-3PUFA)的含量也会随着硒含量的增大而呈上升趋势。
